1-Decanoyl-rac-glycerol is a monoacylglycerol that contains decanoic acid at the sn-1 position. It inhibits the growth of B. cereus, S. typhimurium, and E. coli when used at a concentration of 1 mg/ml and S. aureus when used at a concentration of 0.5 mg/ml. 1-Decanoyl-rac-glycerol is an agonist of transient receptor potential vanilloid 1 (TRPV1) that induces calcium influx in HEK293 cells expressing the human receptor (EC50 = 12.6 μM). It is an emulsifying agent and has been used to increase the storage stability of mayonnaise and viscoelasticity of processed cheese.

1-Decanoyl-rac-glycerol is a food additive, widely used as a functional emulsifier in food industry. It exhibits a broad-spectrum of activity against a variety of food-borne bacteria, fungi and viruses.

Monoctanoin component B also is known as 1-Decanoyl-rac-glycerol. It is a monoacylglyecrol with antibacterial activity. Studies show that 1-Decanoyl-rac-glycerol maybe potential apoptotic agents in T-cells.

1-Decanoyl-rac-glycerol is a microbicide that has been shown to have a broad spectrum of activity against viruses and bacteria. It can be used in tissue culture as an antimicrobial agent, and inhibits the growth of human serum, hydroxyl group, and metal hydroxides. 1-Decanoyl-rac-glycerol has also been shown to cause cell lysis in cancer cells, but not normal cells. This drug is lipophilic and easily crosses biological membranes. In vivo models have shown that this compound is nontoxic to humans at doses up to 100 mg/kg body weight. In vitro tests have shown that 1-decanoyl-rac-glycerol does not inhibit the growth of bacteria or fungi at concentrations as high as 500 μg/mL.
